Traditional Spanish Paella
Paella is a traditional round rice (bomba rice) dish from the Valencia region of Spain, named after the pan, used to cook it. It is still one of the most popular traditional dishes, especially in its home region of Valencia, as well as in Spanish cuisine, which is known all over the world and has many variations in different regions. The most famous dish in Spanish cuisine appeared in the 18th century in the Horta of Valencia. In 1920, a blacksmith from the village of Alaquàs, Garcia Montoro, began to industrialize this paella dish.
After the Spanish Civil War (1936-1939), the country wanted to find a national emblematic dish to develop tourism. General Franco chose paella for several reasons: the inexpensive price, the ease of adaptation, and above all the colors of the dish (red tomato, yellow saffron rice), which are reminiscent of the Spanish flag.
